The new vintage of „Spätburgunder Holzfass“ has a Change in the Name but also in it`s style. The Name is replaced with „Pinot Noir“. Rieger don`t use big old oak casks for this wine any more – thats why they thought the old Name is to „old-fashioned“ and of Course also not fit to their Idea of the style. The grapes are still from the site „Güttigheim“ (over 40 yo vines). Destemmed but not crushed for a 85%, hole bunches 15%. Pump-overs in in the first third and last third of Fermentation. Gentle punchdowns with the temperature-peak. Racking from the mash above 20°C and Pressing after 10-14days. Rest of Fermentation and Debourbage for About 14 days. Racking to French oak Barrels with very tight grain of the forest „Bertranges“ with a size of 225-500 liters. 10% New Oak 40% third used oak and About 50% Stainless steel. Depending on the vintage approx. 12 months in Barrel. Only one racking before bottling. No Filtration. No fining.
